Our PHILOSOPHY

For four decades, Finca Sarbil has been growing on the slopes of Etxauri at the foot of Mount Sarbil. A living project of 1,000 hectares where time is measured in seasons, not hours. Where animal welfare is the logical consequence of a healthy environment.

We work with knowledge and patience to maintain a delicate balance: that of a sustainable ecosystem where each species has its own needs and rhythms. Because we believe that excellence is not manufactured; it is cultivated, cared for, and respected.

Our animals

Our animals do not just inhabit the farm; they are part of it. They live year-round under the open sky, without stables to limit their instinct, practicing an internal transhumance marked by the seasons: they ascend to the high pastures in summer and seek the shelter of the valleys in winter.

Cows and mares are perfectly suited to this mountain. They drink the winter snowmelt that we store in ponds and close the circle of life by returning fertility to the land with their own manure. A process without artifice, where nature leads and we only accompany it. That is what makes us unique.
